Bananas on Toast
Serves 1

Ingredients:

   
     

2 slices high fibre white bread
1/2 banana, thinly sliced
3 pieces pitted prunes, chopped
1 tbsp dried cranberries
1 tbsp chopped nuts
1 tsp maple syrup [or honey]

 

     

Method:

Place sliced banana on high fibre white bread.

Garnish with chopped prunes, cranberries and nuts.

Drizzle with maple syrup [or honey].

Toast in the toaster oven until bananas are just soft and serve immediately.

Use high-fibre white bread for its higher fibre content.

Bananas are high in potassium so they're good for those with high blood pressure and for those who want to avoid high blood pressure.

Don't cut the bananas too early as they will darken. If you really have to cut them early, drizzle with a little lime or lemon juice.

Use prunes as they are good for those with constipation since they are a natural laxative.

Add dried cranberries for colour as they are high in vitamin C and according to some studies, they help clear infection in the urinary tract.

For crunchiness, add some nuts but not too much as nuts are high in fat. However, not to worry to much as the fat in nuts are beneficial polyunsaturated fats.

After drizzling with a little Maple syrup, toast for three to five minutes.
