Bread Pakhora (Indian French Toast)
Serves 4

Ingredients:

   
     

4 slices wholemeal bread with crusts (160g)
4 tablespoons butter or polyunsaturated oil

Batter - To blend till fine:
¼ cup (30g) chick pea flour (called Besan and it is a staple in Indian cooking)
60g fresh soft tofu
¼ cup water
2 (20g) green chillies)
½ cm slice (5g) of ginger
10g garlic (optional)
50g onions
1 plant coriander
¼ tsp salt

 

     

Method:

Heat a flat bottomed frying pan and add the oil or butter or a mixture of both.

Immerse each piece of bread in the batter and soak well.

When the oil is hot, add the bread slices in 1 layer and fry on 1 side over medium high heat for around 2 to 3 minutes till golden brown. Turn over and fry on the other side.

Drain on paper towels and remove as much oil as possible from the Bread Pakhora. Serve as a substantial breakfast. Enough for 4 portions.

 

 
 

 

Violet says:

If you do not have chick pea flour, substitute with 100g cooked garbanzo beans (chick peas), 1 tablespoon plain flour and add an extra 1 tablespoon flour to the batter.

Chick pea flour is high in protein.
