Breakfast Pizza
Serves 1

Ingredients:

   
     

1/3 Focaccia loaf, sliced in half length-wise
4 tbsp canned tomatoes
1/2 slice honey-baked ham, cut into strips
2 tbsp low-fat mozzarella
1 slice canned pineapple (in juice), roughly chopped
Black pepper to taste (or dried chilli flakes)
Parsley to garnish

 

   

Method:

Lightly mash tomatoes in a bowl, spread on focaccia.

Top with sliced ham, pineapple & cheese.

Toast till cheese has melted.

Season with black pepper or dried chilli flake.

Foccacia bread - aromatic quite interesting. It has rosemary, oregano and paprika and other herbs, blended, beautiful aroma when you toast it. It also has a little bit of olive oil, the kind of oil that's good for your heart.

Tomatoes - has a lot of natural substances called lycopene, an anti-oxidant, found in some studies to prevent prostrate cancer.

Pineapples - use canned pineapple for convenience early in the morning, choose the canned version that's in natural juice, not one in too much sugar.

Mozarella cheese - smells beautiful, choose the low-fat version. You get the calcium, protein and flavour but not the fat and calories of the regular mozarella cheese.

Grill at about 250 deg Celcius for 8 to 10 minutes untill mozarella cheese melts all over the ingredients and the bread gets a beautiful golden brown colour

Remember breakfast is the most important meal of the day so don't rush off to work before you have a bite, be creative, try something new.
