Celebration Mee Sua Breakfast (178 Calories)
Serves 1

Ingredients:

   
     

1 bundle of dried Mee Sua (35g)* or Rice Vermicelli (Bee Hoon) or Glass Noodles
1 hard boiled egg
1 cup water
1 tbsp sugar
1 pandan leaf

 

     

Method:

Break the shell of the hard boiled egg and peel it away. Boil the 1 cup water in a small saucepan with the pandan leaf and the sugar. Add the egg.

In the meantime, in another small saucepan, boil about 1 litre of water and add the mee sua – spread the noodles apart with a pair of chopsticks.

When the mee sua is semi soft, around 30 seconds, remove it with the pair of chopsticks and drain before putting it into the hard boiled egg broth.

Boil a further 10 seconds to allow the broth flavour to be imparted into the mee sua.

Serve with 1 Mandarin Orange for breakfast on the 1st day of the Lunar New Year.

This is a celebration dish for the Chinese on the Lunar New Year and is usually served by the Hokkien dialect group.

Children, young ones as well as adults, will offer a bowl of mee sua to each parent as a sign of respect and to wish mother and father a long and happy life ahead as the mee sua noodles represent longevity.
