Raisin French Toast
Serves 1

Ingredients:

   
     

1 egg
3/4 cup low fat milk
1 tsp vanilla essence
2 slices raisin bread
2 tsp olive oil
lemon slices to garnish

 

   

Method:

Combine egg, milk and vanilla essence in a large bowl.

Soak raisin bread slices in egg mixture.

Heat olive oil in a pan, place the raisin bread in the pan and cook until golden brown.

Remove French toast from pan and arrange on a plate.

Garnish with lemon slices and serve immediately.

If you're worried about cholesterol, don't use the whole egg because all the cholesterol is in the egg yolk. Use 3 egg whites instead.

Vanilla essence adds a beautiful flavour and masks that “eggy” smell.

Put just a little bit of oil to release the toast off the pan. If you don't want to use oil, you can get a spray.

If you like your French Toast really juicy, leave the raisin bread to soak in the egg mixture for a longer time.
