Red Dates and Peanuts Breakfast Broth
Serves 2

Ingredients:

   
     
60g raw peeled peanuts
25g (around 12) dried Chinese red dates
15g dried sweet bean curd skin
1 egg white (optional)
4 cups water
2 pandan leaves
2 tbsp honey
 

     

Method:

Soak the peanuts in hot water for about 2 hours. You can cook this dish the night before. Boil 2 cups of water, drain the peanuts and add to the water with the pandan leaves.

Wash the red dates and add to the peanuts - boil for around 30 to 40 minutes till the peanuts and red dates are soft and the liquid has become half the quantity.

Break up the dried sweet bean curd skin into large pieces and add to the peanut and red date broth and bring to the boil. Streak in the white of 1 egg, add honey to taste and serve.

Start this dish the night before or you can even cook it the night before and microwave to heat up the broth or eat it cold for breakfast.

If you like to have the dish fresh, just start the boiling before you take your morning shower and after you're all ready and dressed up, it is just in time to add the bean curd skin, honey and egg white. This is a delectable start to the day.

Red dates are good for those with poor appetite or fatigue.
