Scrambled Tofu Piquant
Serves 4

Ingredients:

   
     
50g red capsicum, cubed
50g yellow capsicum, cubed
50g green capsicum, cubed
100g tomatoes, cubed
50g onion, thinly sliced lengthwise
100g cooked potatoes, cubed with skin on
150g tofu
¼ tsp salt or more to taste
Black pepper powder
2 tbsp olive oil
4 large Romaine lettuce leaves
 

   

Method:

Heat the oil in a wok or frying pan, add the onions and fry briefly before adding all the other ingredients except for the tofu.

After 3 minutes, add the tofu and stir fry till hot through.

Serve as a breakfast scramble on a large piece of Romaine leaf.

You can fold the leaf and form a sort of vegetable spring roll and this is a delicious breakfast.
