Soy & Ginger Chicken Rolls
Serves 1

Ingredients:

   
     

2 Lite Meal Rolls
30g roast chicken [OR left-over chicken], skin removed
Soy-ginger dressing
Lettuce leaves
1/4 tsp roasted sesame seeds for garnishing

Soy-Ginger Dressing
1 tsp low-sodium soy sauce
1 tsp freshly grated ginger
Dash of lemon juice

 

   

Method:

Shred the roast chicken [or left-over chicken].

Mix all the ingredients for the dressing in a small bowl and add the shredded chicken, combine well.

Slice the Lite Meal Rolls in half.

Place lettuce leaves and chicken on the bottom halves of the Lite Meal Rolls.

Garnish with roasted sesame seeds and cover with the top halves of the Lite Meal Rolls.

Remove the skin of the left-over chicken.

You can use any meat left over in your refrigerator. It's fine if it’s flavoured because it will bring it's own unique flavour to your breakfast.

The lite-meal rolls are high in fibre and good if you don't really like a large breakfast.

Lettuce adds the crunch to the sandwich and is low in calories.
