Spanish Gazpacho
Serves 1

Ingredients:

   
     

1/2 cup canned chopped tomatoes
1/2 cucumber, peeled and roughly chopped
1 spring onion, chopped
1/2 red capsicum, de-seeded and roughly chopped
1 clove garlic
3/4 cup chilled water or chicken stock
1 tbsp olive oil
Dash of Tabasco, salt and black pepper to taste
1 tbsp non-fat natural yoghurt
Fresh mint for garnishing
2 lite meal rolls

 

   

Method:

Place vegetables, garlic, water/chicken stock and olive oil in a blender.

Add a dash of Tabasco, season with salt and black pepper.

Blend mixture until smooth.

Pour into a bowl, garnish with non-fat natural yoghurt and fresh mint.

Serve with Gardenia Lite Meal Rolls on the side.

Unlike Asian soups, this is a cold soup. It's like a vegetable-based soup, similar to mixed-fruit juice.

Tomatoes and capsicums are rich in lycopene, especially good for men because it helps to reduce the risk of prostrate cancer.

Use a little bit of olive oil which healthy as it contains mono unsaturated fat.

If you're preparing this recipe for children, you don't have to add Tabasco sauce because it can be a little too spicy for them.

Instead of cold water, you can also use home-made chicken stock, just make sure you remove the layer of fat on top.
