Tofu Salad (368 Calories)
Serves 1

Ingredients:

   
     

225g tofu
1 stalk of spring onions (chopped)
Half a zucchini (chopped)
2 tbsp olive oil
1 tbsp tahini
1 tbsp mustard
Dash of salt
Dash of garlic powder

 

   

Method:

Mash the tofu with fork.

Add chopped vegetables, tahini, mustard and seasonings. Mix well with spoon and serve cold. (Use it the same way as sandwich filler or on a bed of lettuce. Garnish with tomatoes and cucumbers.)

Tahini is a popular condiment used in Middle East cooking. It’s made of sesame seeds which contain a lot of monounsaturated and polyunsaturated fat.

This recipe is suitable for those of blood type O because they can take a lot of protein. Besides meat and seafood, tofu is an excellent choice of protein.

Zucchini is a great source of vitamin C which is a powerful anti-oxidant.
