Zucchini Salad (423.5 Calories)
Serves 1

Ingredients:

   
     

1 small-med zucchini
30g feta cheese
1 tbsp lemon or lime juice
1 tbsp olive oil
Dash of salt

 

     

Method:

Cut zucchini into quarters lengthwise, and then chop coarsely.

Crumble feta cheese on top.

Whip together oil and lemon or lime juice. Pour over zucchini and feta. Toss lightly.

This salad can be eaten immediately or left to marinate together for a few hours

Zucchini is a great source of vitamin C, which is a powerful anti-oxidant.

Use freshly-squeezed lime juice to get the maximum amount of vitamin C.

Olive oil is used because it’s a monounsaturated oil which is said to contain anti-cancer properties
