Basil and Tomato Pasta


Ingredients:

   
     

250g pasta                              
2 tbsp olive oil                         
4 cloves garlic (chopped)                     
1 large onion (chopped)                
1 tbsp chilli paste                      
200g tomato paste                        
12 basil leaves (chopped)          
100ml cream                                     
1 cup assorted capsicums (cubes)    
Salt to taste
1 tsp crushed pepper              
1 tbsp cheddar cheese (grated)             

 

   

Method:

Boil the pasta in salted water and bay leaves. Remove, add little oil, cool and store in the fridge

Cut the capsicums into 2.5cm-cubes and store in the fridge.

Heat oil in a pan, add the garlic and onions and sauté well. Add pepper corns, chilli paste and tomato paste and let it cook.

Season with salt, add the basil leaves and finish with cream.

Cool and store the sauce.

When ready to eat, heat little oil in a pan and toss the capsicums with the pasta.

Add the sauce and let it simmer together for a minute. Mix in the grated cheese and serve hot.
