Yaki Udon

Ingredients:

For Japanese Noodle Sauce:
½ cup tonkatsu sauce
¼ cup mirin
¼ cup soy sauce
2 tbsp Japanese sesame oil
2 tsp grated ginger

For Yaki-udon:
4-5 prawns
¼ yellow onions, shredded
1 tsp minced garlic
1 cup finely shredded cabbage
200gm ready-made udon
Japanese noodle sauce
Vegetable oil, for frying
Ao-nori (seaweed)
Beni-shoga (Japanese pickled ginger)

Method:

For Japanese Noodle Sauce:
Combine all the ingredients and simmer over low heat for a few minutes.

For Yaki-udon:
Heat up some vegetable oil in a frying pan and stir fry prawns over medium heat until cooked. Remove from pan and set aside for later use.

In the same pan, stir fry onions and garlic. Add cabbage to cook until tender.

Add in cooked prawns and noodle; toss well to combine.

Add Japanese noodle sauce and continue to fry until noodle is well-coated with sauce.

Adjust taste to your liking. Sprinkle ao-nori and beni-shoga over noodle.
