Nyonya Cuisine

Nuts used for the Ayam Buah Keluak dish must be cooked carefully or the dish will turn poisonous

Nyonya food is unique to the Peranakan culture and can mainly be found in the former British Straits Settlements of Singapore, Malacca and Penang.

It is a blend of Malay and Chinese cooking which uses mainly Chinese ingredients with South-East Asian spices such as lemon grass, turmeric, screwpine leaves and chillies.

Coconut milk and sambal (a condiment made from chilli, onion and garlic) are also popular ingredients in many Peranakan dishes.

Ayam Buah Keluak is a distinctive chicken dish that uses fermented nuts from the Kepayang tree (a mangrove tree that grows in Malaysia and Indonesia). Many say the nut is an acquired taste.

Nyonya Kueh are usually colourful, sweet and sticky desserts commonly available throughout Malaysia and Singapore.
