David Rocco keeps it simple

SINGAPORE : He doesn't consider himself a chef, just a regular guy who likes to cook and takes the best out of life.

But his simple ways have actually won him much adoration from foodies around the world who have watched him cook great Italian meals in his own food and lifestyle TV series "David Rocco's Dolce Vita".

In Singapore for the annual World Gourmet Summit, the Canadian-born actor and producer told Primetime Morning that he loves cooking so much that he does it almost every day when he is back home.

"For me, cooking is creative and is about having fun, it’s not just to eat," he said.

And it looks like his kids have inherited those genes too. The proud father of one-year-old twin girls, Emma and Giorgia, says his daughters enjoy watching him cook and "get so amused by being in the kitchen".

Growing up in an Italian family, Rocco says his love for food, cooking, and preparing meals for friends and family is part of his DNA. The celebrity chef learned his way around the kitchen, watching his mother whip up simple and delectable meals.

"The beauty of Italian cuisine and Italian cooking is that any one can cook. The idea is to use simple ingredients and fresh ingredients," he said.

"Every region has its style of cooking in Italy, but it’s always about less is more, it’s not about loading up ingredients."

David Rocco's Spaghetti alla Caprese

David Rocco shared with us his recipe for Spaghetti alla Caprese, or Capri Pasta, a simple cold pasta dish that uses ingredients based on the Capri salad, a famous salad from the Italian island of Capri.

Ingredients (Serves four):
Cooked spaghetti (450g)
2 tomatoes, diced
1 large mozzarella ball, cubed
1/2 cup extra virgin olive oil (120ml)
1 teaspoon oregano
salt to season
4 basil leaves

To start your Spaghetti alla Caprese:

- Mix tomatoes and mozzarella in a large bowl.
- Add extra virgin olive oil, oregano, salt and basil leaves.
- Add to cooked spaghetti, mix well and serve.
