SINGAPORE: Leaders and invited guests who are attending the APEC summit will be treated to a fusion of western and local delights at the Singapore Evening this Saturday.
Some 30 chefs and assistants have been toiling for two months to prepare the menu for the special occasion.
A specially created appetiser, soup, a choice of chicken or beef for the main course and finally dessert. These dishes will be served to APEC leaders like US President Barack Obama and Chinese President Hu Jintao.
Locally renowned chefs were roped in to prepare the dishes that will strongly represent multi-cultural Singapore.
Eric Teo, executive chef, Mandarin Oriental, said: "This soup is really special because we take one of the culture which is Malay and this Soto Ayam is very popular. No matter what nationality you are, it is so rich and nice that we actually use the egg white to extract out the oil and maintain the clarity and the taste of the soup.
Yen Koh, executive chef, Unilever Foodsolution, said: "The special thing about the dessert will be the flavours. We are using traditional Chinese dessert to incorporate into the western style of the desserts."
As for the 2,000 delegates attending the Singapore Evening at the Esplanade, they will be treated to a buffet spread which will include the different varieties of local food.
Each zone will not only provide the food and the culture, they will also provide entertainment showcasing the cultures.
Soo Siew Keong, programme chair, APEC Accomodation, Hospitality and Singapore Experience Committee, said: "For example, if they go to the Malay zones, they can have the performances by the kompang, they could also have the opportunities to try the Saris available and they also get to sample all the different food like gado-gado and satay from the Malay kiosk."
For now, the chefs are busy adding the final touches before serving the meals this Saturday evening. - CNA/vm
