This year's Singapore Food Festival is swinging back to the sixties, offering traditional dishes that are now hard to find.
The month-long activity kicks off on July 1st with Makan Mania hawker fare at Parco Bugis Junction.
Rickshaw noodles have risen from a humble staple in the sixties to a treat in the 21st century.
Food Festival organisers hope that noodles and other nostalgic food will bring in the crowds.
Half a million people are expected to visit festival events throughout July and up to 75,000 of them will be foreigners with food ranking high in their spending priorities.
Margaret Teo, Director, Food and Beverage, Singapore Tourism Board, said: "First is shopping followed by accommodation, then food. In absolute terms, that amounts to $700 million spent on food by tourists in Singapore."
New dishes are also being whizzed up for the festival, including healthy options.
"This dish is low fat and low salt," said Kumar, Chef, Delhi Restaurant.
His contribution is a curry which won first prize in the healthy ethnic category of the New Dish Creation competition. - CNA /ch
