Starter Lab, a famous bakery from Canggu, Bali, is now open in Singapore with an outlet at Havelock Road. It’s the only one outside of the Indonesian island.
The bakery is known for its sourdough bread that has attracted many fans, including Locavore, the only Indonesian restaurant on Asia’s 50 Best Restaurants list.
Filipino-American Emerson Manibo started the original Starter Lab in Bali in 2017 with his partner, Min Siah. He has worked at New York’s three Michelin-starred Per Se and some of the best bakeries in the business, Tartine Bakery and Della Fattoria in California, and is the baker consultant for the Singapore operation.
The outlet, which seats around 35, offers an extensive list of sandwiches, breads and pastries, as well as coffee by Anther by Glasshouse. There’s also a takeaway booth for those who are just making a quick pit stop.
There are seven types of sourdough bread on offer, priced between S$12 and $18 for a loaf weighing around 1kg. Signature loaves include the miso baguette and the rosemary lemon with sea salt, while some must-try items on the menu include the Starter Lab 3 cheese and the roasted cauliflower sandwiches. They also make their pickles and mascarpone cheese in-house.
The bakery is known for its sustainable practices, which it’s adopting here through not having single-use plastics or straws. According to co-owner Min, they’re also working with other sustainable-minded businesses such as local company, UglyFood, and Bali-based East Java and Co.
