It’s Teppanyaki time! This week, the “Teppan Adventurers” - comprising “Captain” Yuzo Gucchi, Emi Hashino and Masayuki Tokumitsu - will travel around Japan armed with an iron plate. They will visit several places in search of famous local ingredients to grill and create their own version of local specialities using the iron plate.
The team begins its journey at Fujisan Hongu Sengentaisha, a World Heritage Site in Fujinomiya, Shizuoka Prefecture. Fujinomiya is famous for its yaki soba so the team members head to a popular restaurant called Uruoitei. It attracts long queues of people, some of whom come all the way from other prefectures. The typical Fujinomiya yaki soba is made with chewy noodles and lots of cabbage from the mountains. The owner uses lard to cook the yaki soba. Water from Mt. Fuji is poured on the noodles, which are then topped with sardine powder. After trying Fujinomiya’s famous yaki soba, the Teppan Adventurers begin cooking their own version of the local dish. Captain Gucchi uses salt for seasoning instead of Worcestershire sauce. He adds a Suruga Bay speciality, Sakura shrimps, and also some lemon. Other ingredients he uses includes ginger, Welsh onion oil, pork ribs, cabbage, sake, shirodas
